Aunt Shirley's Easy Apple Cake
This one came from Aunt Shirley by way of my mother. In my opinion, there are too
many ingredients for it to really be "easy", but that's the name.
Ingredients:
- 2 cups apples, diced (use apples with not much juice)
- 1 cup sugar
- 1/4 cup vegetable oil
- 1 beaten egg
- 1 tsp vanilla extract
- 1 cup unsifted flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup raisins (calls for white; we used Craisins)
- 1/2 cup chopped nuts (calls for walnuts; we used pecans)
Procedure:
- Preheat oven to 350 degrees
- Place apples in mixing bowl
- Add sugar, mix well
- Let stand for 15-30 minutes
- Add oil, egg, vanilla extract, and blend together
- Sift dry ingredients together and mix in
- Add raisins and nuts
- Pour into greased and floured 8" square pan
- Bake 50 minutes
- Cool 10 minutes
- Cut into squares
