Bubba Cookies

This is the other recipe for which my grandmother is most remembered. They're basically butter cookies, without the butter (I don't ever remember Bubba using butter in anything).
Ingredients:
- 1 3/4 sticks margarine
- 2 cups flour
- 1/2 cup sugar
- 3 tbs vanilla (or almond) extract
- 2 egg yolks
- jelly, cinnamon sugar, chopped nuts
Preparation:
- Blend margarine and sugar
- Mix eggs and vanilla into it
- Add flour (slowly) to the mixture
- Form into cookies:
Style one - roll into ball, place onto cookie sheet, press thumb into center to form an indentation, fill with jelly
Style two - roll into cylinder, bend into crescent shape, dip into cinnamon sugar, place onto cookie sheet
Style three - roll into cylinder, bend into "S" shape, dip into nuts, place onto cookie sheet
- Bake at 350 about 25 minutes, until golden
I was amazed that I had never made these for my kids (or wife, either) until Claire was 11. They were pretty easy to make, and tasted more or less the way I remembered from my youth.
